Description

Delicious and moist carrot cake bars topped with cream cheese frosting.


Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 8 oz cream cheese
  • 1/4 cup unsalted butter
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix grated carrots, sugars, and oil.
  3. Add eggs and vanilla, then mix well.
  4. In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Fold in walnuts and raisins.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25–30 minutes or until a toothpick comes out clean.
  9. Let cool before frosting.
  10. For frosting, beat cream cheese and butter until smooth, then add powdered sugar.
  11. Spread frosting over cooled cake bars and cut into squares.
