Description
A traditional beef stew popular in Latin cuisine.
Ingredients

- 2 pounds beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bell peppers, chopped
- 2 tomatoes, diced
- 1 teaspoon cumin
- 2 cups beef broth
- Salt to taste
- Pepper to taste
- 1 bay leaf
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- Add onion, garlic, and bell peppers to the pot. Sauté until soft.
- Add tomatoes and cumin. Cook for 2 minutes.
- Return beef to the pot and stir.
- Add beef broth, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove bay leaf before serving.
- Garnish with fresh cilantro.
Notes
- Serve with rice or tortillas.
- Adjust seasoning to your taste.
- Can be made a day ahead for better flavor.
