Description

A traditional beef stew popular in Latin cuisine.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, chopped
  • 2 tomatoes, diced
  • 1 teaspoon cumin
  • 2 cups beef broth
  • Salt to taste
  • Pepper to taste
  • 1 bay leaf
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion, garlic, and bell peppers to the pot. Sauté until soft.
  5. Add tomatoes and cumin. Cook for 2 minutes.
  6. Return beef to the pot and stir.
  7. Add beef broth, bay leaf, salt, and pepper.
  8. Bring to a boil, then reduce heat and simmer for 2 hours.
  9. Remove bay leaf before serving.
  10. Garnish with fresh cilantro.

Notes

  • Serve with rice or tortillas.
  • Adjust seasoning to your taste.
  • Can be made a day ahead for better flavor.
