A savory tart featuring caramelized onions and roasted butternut squash.
Ingredients

- 1 sheet of puff pastry
- 2 cups butternut squash, diced
- 2 medium onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup goat cheese, crumbled
- 1 egg, beaten
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and place it in a tart pan.
- In a skillet, heat olive oil over medium heat. Add onions and cook until caramelized, about 15-20 minutes.
- Add diced butternut squash, thyme, salt, and pepper to the skillet. Cook for another 10 minutes.
- Spread the onion and squash mixture on the puff pastry.
- Sprinkle goat cheese on top.
- Brush the edges of the pastry with beaten egg.
- Bake for 25-30 minutes or until the pastry is golden brown.
Notes
- Serve warm or at room temperature.
- Can be made ahead and reheated.
- Substitute feta cheese for goat cheese if preferred.
