Ingredients

  • 1 sheet of puff pastry
  • 2 cups butternut squash, diced
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup goat cheese, crumbled
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and place it in a tart pan.
  3. In a skillet, heat olive oil over medium heat. Add onions and cook until caramelized, about 15-20 minutes.
  4. Add diced butternut squash, thyme, salt, and pepper to the skillet. Cook for another 10 minutes.
  5. Spread the onion and squash mixture on the puff pastry.
  6. Sprinkle goat cheese on top.
  7. Brush the edges of the pastry with beaten egg.
  8. Bake for 25-30 minutes or until the pastry is golden brown.
