Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Fold in caramel sauce, diced apples, and cinnamon.
  7. Pour the cheesecake mixture over the crust.
  8. Bake for 55-60 minutes until set.
  9. Allow to cool, then refrigerate for at least 4 hours.
  10. Serve with additional caramel sauce and nuts if desired.
