			- 1 whole turkey (12–14 lbs)
- 1/4 cup Cajun seasoning
- 1/2 cup olive oil
- 1 lemon, quartered
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 cups chicken broth
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix Cajun seasoning and olive oil to create a paste.
- Rub the paste all over the turkey, including under the skin.
- Stuff the cavity with lemon, onion, and garlic.
- Place turkey in a roasting pan and pour chicken broth around it.
- Season with salt and pepper.
- Roast for about 3 hours, or until the internal temperature reaches 165°F (75°C).
- Let the turkey rest for 30 minutes before carving.
