Description
A flavorful Cajun shrimp pasta salad with fresh vegetables.
Ingredients

- 8 ounces pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- Season shrimp with Cajun seasoning.
- In a skillet, heat olive oil over medium heat. Add shrimp and cook until pink, about 3-4 minutes.
- In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, bell peppers, and red onion.
- Drizzle with lemon juice and toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad can be made a day ahead.
- Adjust the Cajun seasoning to taste.
- Feel free to add other vegetables.
