Ingredients

  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon cajun seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup cooked shrimp, chopped
  • 1 tablespoon green onions, chopped

Instructions

  1. Peel the hard-boiled eggs and slice them in half.
  2. Remove the yolks and place them in a bowl.
  3. Add mayonnaise, Dijon mustard, cajun seasoning, salt, and pepper to the yolks.
  4. Mash the yolk mixture until smooth.
  5. Fold in the chopped shrimp and green onions.
  6. Fill the egg whites with the yolk mixture.
  7. Garnish with additional green onions if desired.
