Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Green onions for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell pepper, sauté for 5 minutes.
  3. Add garlic, sauté for another minute.
  4. Slice the sausage and add to the skillet, cook until browned.
  5. Stir in rice, paprika, cayenne, salt, and pepper.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes or until rice is tender.
  8. Fluff rice with a fork and garnish with green onions before serving.
