A flavorful one-pan dish featuring Cajun sausage and rice.
Ingredients

- 1 lb Cajun sausage
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- Green onions for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and bell pepper, sauté for 5 minutes.
- Add garlic, sauté for another minute.
- Slice the sausage and add to the skillet, cook until browned.
- Stir in rice, paprika, cayenne, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is tender.
- Fluff rice with a fork and garnish with green onions before serving.
Notes
- Adjust spice level to your preference.
- Use any type of sausage if Cajun is unavailable.
- Leftovers can be stored in an airtight container in the fridge.
