- 1 pound chicken, diced
- 1 pound shrimp, peeled and deveined
- 1 pound andouille sausage, sliced
- 2 cups rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage, cooking until browned.
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Stir in rice and Cajun seasoning. Cook for 2 minutes.
- Add diced tomatoes and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add shrimp and cook for an additional 5 minutes.
- Season with salt and pepper. Serve hot.

- Feel free to add more vegetables like okra or corn.
- Adjust the spiciness by varying the amount of Cajun seasoning.
