- 8 oz penne pasta
- 2 cups cooked chicken, shredded
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning
- 1/2 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large bowl, mix the cream cheese, chicken broth, and Cajun seasoning until smooth.
- Add the shredded chicken, diced tomatoes, and cooked pasta to the cream cheese mixture. Stir to combine.
- Season with salt and pepper to taste.
- Transfer the mixture to a baking dish and top with cheddar cheese and green onions.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
Notes
- Feel free to add more vegetables like bell peppers or spinach.
- Adjust the Cajun seasoning to your spice preference.
