A flavorful dish combining spicy Cajun chicken with seasoned rice.
Ingredients

- 2 chicken breasts
- 2 tablespoons Cajun seasoning
- 1 cup rice
- 2 cups chicken broth
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Season chicken breasts with Cajun seasoning.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 5-7 minutes on each side until golden brown.
- Remove chicken and set aside.
- Add onion, bell pepper, and garlic to the skillet. Sauté until soft.
- Add rice and stir for 1-2 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat, place chicken on top, cover, and simmer for 20 minutes.
- Fluff rice with a fork before serving.
Notes
- Adjust Cajun seasoning to taste.
- Can substitute chicken with shrimp for variation.
- Serve with a side salad.
