Ingredients

  • 2 stalks of celery, diced
  • 1 bell pepper, chopped
  • 4 cloves of garlic, minced
  • 6 cups of vegetable broth
  • 1 can of diced tomatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 teaspoon of oregano

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté until soft.
  3. Add garlic and bell pepper. Cook for 2 more minutes.
  4. Add chopped cabbage, diced tomatoes, vegetable broth, salt, pepper, thyme, and oregano.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Blend if desired for a smoother texture.
  7. Serve hot and enjoy.
