Ingredients

- 4 large potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- Salt to taste
- Pepper to taste
- 1/4 cup butter, for frying
Instructions
- Grate the potatoes and onion into a bowl.
- In a separate bowl, beat the eggs and add flour, salt, and pepper.
- Mix the egg mixture into the grated potatoes and onion.
- Heat butter in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet.
- Cook until golden brown, about 3-4 minutes per side.
- Remove and drain on paper towels.
