Ingredients

- 1 medium butternut squash, peeled and diced
- 2 cups bread cubes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup celery, chopped
- 1/2 cup dried cranberries
- 1/4 cup pecans, chopped
- 2 cups vegetable broth
- 1 teaspoon sage
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, sauté onion, garlic, and celery until soft.
- Add butternut squash and cook until tender.
- Combine sautéed mixture with bread cubes, cranberries, and pecans.
- Pour in vegetable broth and season with sage, thyme, salt, and pepper.
- Mix well and transfer to a baking dish.
- Bake for 25-30 minutes until golden brown.
Notes
- You can use gluten-free bread for a gluten-free option.
- Add more vegetables if desired.
- This stuffing can be made a day in advance.
