A simple recipe for making butternut squash puree.

- 1 medium butternut squash
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half and remove the seeds.
- Drizzle with olive oil and season with salt and pepper.
- Place the halves cut side down on a baking sheet.
- Bake for 40-50 minutes until tender.
- Let it cool, then scoop out the flesh.
- Blend the flesh until smooth.

- Store leftover puree in an airtight container.
- Use the puree in soups or baked goods.
