Ingredients

- 12 oz pasta
- 1 medium butternut squash, peeled and diced
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss butternut squash with olive oil, salt, and pepper on a baking sheet.
- Roast for 25-30 minutes or until tender.
- Cook pasta according to package instructions.
- In a skillet, sauté onion and garlic until soft.
- Add roasted squash, vegetable broth, and cream to the skillet. Blend until smooth.
- Combine the sauce with cooked pasta.
- Stir in Parmesan cheese and mix well.
- Serve hot, garnished with fresh basil.
Notes
- Feel free to use any pasta of your choice.
- Adjust seasoning based on preference.
- This dish can be made vegan by using coconut cream and nutritional yeast.
