Ingredients

  • 1 cup sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butterscotch sauce
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. In another bowl, combine flour, baking powder, baking soda, and salt.
  6. Add the dry ingredients to the butter mixture alternately with the buttermilk.
  7. Fold in the butterscotch sauce.
  8. Divide the batter evenly between the prepared pans.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let them cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. Whip the heavy cream with powdered sugar until soft peaks form.
  12. Layer the cakes with whipped cream and extra butterscotch sauce.
