- 1 cup unsalted butter, softened
- 2 tablespoons fresh herbs (rosemary, thyme, sage), chopped
- 4 cloves garlic, minced
- 1 tablespoon lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix together the softened butter, herbs, garlic, lemon zest, salt, and pepper.
- Pat the turkey dry with paper towels.
- Carefully loosen the skin of the turkey and spread the butter mixture under the skin.
- Rub the remaining butter mixture all over the turkey.
- Place the turkey in a roasting pan and cook for about 13-15 minutes per pound.
- Check for doneness with a meat thermometer (165°F or 74°C in the thickest part).
- Let the turkey rest for 20-30 minutes before carving.
