Ingredients

  • 1 cup unsalted butter, softened
  • 2 tablespoons fresh herbs (rosemary, thyme, sage), chopped
  • 4 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix together the softened butter, herbs, garlic, lemon zest, salt, and pepper.
  3. Pat the turkey dry with paper towels.
  4. Carefully loosen the skin of the turkey and spread the butter mixture under the skin.
  5. Rub the remaining butter mixture all over the turkey.
  6. Place the turkey in a roasting pan and cook for about 13-15 minutes per pound.
  7. Check for doneness with a meat thermometer (165°F or 74°C in the thickest part).
  8. Let the turkey rest for 20-30 minutes before carving.
