Description

A spicy and cheesy buffalo chicken quesadilla that’s easy to make.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions

  1. Mix the shredded chicken and buffalo sauce in a bowl.
  2. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  3. Place one tortilla in the skillet.
  4. Spread half of the chicken mixture on one half of the tortilla.
  5. Sprinkle half of the cheddar and mozzarella cheese over the chicken.
  6. Fold the tortilla in half and cook until golden brown, about 3-4 minutes.
  7. Flip and cook the other side until golden brown and cheese is melted.
  8. Remove from skillet and repeat with remaining tortillas and filling.
  9. Slice and serve warm.

Notes

  • Adjust the amount of buffalo sauce to your spice preference.
  • Serve with ranch or blue cheese dressing for dipping.
  • Feel free to add vegetables like bell peppers or onions.
