Description
A spicy and cheesy buffalo chicken quesadilla that’s easy to make.
Ingredients

- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 2 tablespoons olive oil
Instructions
- Mix the shredded chicken and buffalo sauce in a bowl.
- Heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Place one tortilla in the skillet.
- Spread half of the chicken mixture on one half of the tortilla.
- Sprinkle half of the cheddar and mozzarella cheese over the chicken.
- Fold the tortilla in half and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden brown and cheese is melted.
- Remove from skillet and repeat with remaining tortillas and filling.
- Slice and serve warm.
Notes
- Adjust the amount of buffalo sauce to your spice preference.
- Serve with ranch or blue cheese dressing for dipping.
- Feel free to add vegetables like bell peppers or onions.
