Delicious brown sugar pop tart cookies filled with fruity jam.
Ingredients

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup fruit jam or preserves
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together the butter and brown sugar.
- Add in egg and vanilla, mix well.
- Combine flour, salt, and baking powder in another bowl.
- Gradually add dry ingredients to the wet mixture.
- Divide dough in half, roll out each half on a floured surface.
- Cut into rectangles and place half on a baking sheet.
- Spread a spoonful of jam on each rectangle.
- Top with remaining rectangles, sealing edges with a fork.
- Bake for 12-15 minutes until golden.
- Let cool, then dust with powdered sugar.

- Use your favorite fruit jam for filling.
