Ingredients

  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup fruit preserves
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream the butter and sugars together.
  3. Add the egg and vanilla, mix well.
  4. In another bowl, whisk the flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Roll out the dough and cut into rectangles.
  7. Place a spoonful of fruit preserves on half of the rectangles.
  8. Top with another rectangle and seal the edges.
  9. Bake for 12-15 minutes until golden.
  10. Mix powdered sugar and milk for icing, then drizzle over cookies.
