Ingredients

  • Broccoli florets: 2 cups
  • Quinoa: 1 cup
  • Cherry tomatoes: 1 cup, halved
  • Red onion: 1/4 cup, finely chopped
  • Feta cheese: 1/2 cup, crumbled
  • Olive oil: 3 tablespoons
  • Lemon juice: 2 tablespoons, freshly squeezed
  • Salt and pepper: to taste

Instructions

  1. Rinse quinoa under cold water, then combine with 2 cups of water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork after letting it sit for 5 minutes.
  2. Blanch broccoli florets in boiling salted water for 2-3 minutes, then transfer to ice water to stop cooking. Drain and set aside.
  3. In a large bowl, combine cooked quinoa, blanched broccoli, cherry tomatoes, red onion, and feta cheese. Mix gently.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  5. Adjust seasoning if necessary and serve immediately or chill for 30 minutes to enhance flavors.
