Description
A fresh and healthy broccoli pasta salad.
Ingredients

- 2 cups of cooked pasta
- 1 cup of broccoli florets
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, diced
- 1/4 cup of olives, sliced
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- Blanch broccoli in boiling water for 2 minutes. Drain and cool.
- In a large bowl, combine pasta, broccoli, cherry tomatoes, red onion, olives, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use whole grain pasta for a healthier option.
- Add grilled chicken for extra protein.
- Adjust the amount of dressing to your taste.
