Ingredients

  • 2 cups of cooked pasta
  • 1 cup of broccoli florets
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, diced
  • 1/4 cup of olives, sliced
  • 1/4 cup of feta cheese, crumbled

  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and cool.
  2. Blanch broccoli in boiling water for 2 minutes. Drain and cool.
  3. In a large bowl, combine pasta, broccoli, cherry tomatoes, red onion, olives, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
