Description

Ingredients

  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1 gallon water
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 4 cloves garlic, crushed
  • 2 bay leaves
  • 12 gallons ice water

Instructions

  1. Dissolve salt and sugar in 1 gallon of water in a large pot.
  2. Add peppercorns, allspice, garlic, and bay leaves.
  3. Bring to a boil and then let cool.
  4. Add the brine to a large container with the turkey.
  5. Fill with ice water to submerge the turkey completely.
  6. Refrigerate for 12 to 24 hours.
  7. Remove turkey from brine and rinse with cold water before cooking.

  • Use a non-reactive container for brining.
