- 4 eggs

- 1/2 cup diced bell peppers
- 1/2 cup cooked bacon or sausage, crumbled

Instructions
- In a bowl, whisk the eggs with salt and pepper.
- Heat a skillet over medium heat and scramble the eggs until fully cooked.
- Add the bell peppers and cooked bacon or sausage to the eggs, mixing well.
- Place a tortilla on a flat surface and add a portion of the egg mixture and cheese.
- Roll the tortilla tightly and place it seam-side down on a plate.
- Repeat with remaining tortillas and ingredients.
- Serve warm.
