Ingredients

- 2 pounds of potatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 425°F (220°C).
- Dice the potatoes into small cubes.
- In a bowl, mix potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes until golden brown and crispy, stirring halfway.
- Remove from oven and toss with fresh parsley before serving.
Notes
- For extra flavor, add onion or bell pepper.
- Serve with eggs for a complete breakfast.
