- 8 large eggs
- 1 cup of milk
- 1 cup of shredded cheddar cheese
- 1 cup of diced bell peppers
- 1/2 cup of diced onions
- 2 cups of chopped spinach
- 1 cup of cooked and crumbled breakfast sausage
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 4 slices of cubed bread
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking dish.
- Cook the breakfast sausage in a skillet until browned, then set aside.
- Sauté the diced onions and bell peppers for 5-7 minutes, then add the spinach and cook until wilted.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Add the cooked sausage, sautéed vegetables, and cubed bread to the egg mixture, then fold in the cheddar cheese.
- Pour the mixture into the greased baking dish and bake for 30-35 minutes until golden brown and set.
- Let it cool for 5-10 minutes, then cut into squares and serve warm.
