Ingredients

- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup bell peppers, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 4 large eggs
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a skillet over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell peppers, black beans, and diced tomatoes.
- Stir in chili powder, cumin, salt, and pepper.
- Simmer for 10 minutes.
- Make wells in the chili and crack an egg into each well.
- Cover and cook until eggs are set.
- Garnish with cilantro before serving.
