Ingredients

- 2 lamb shanks
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- Heat olive oil in a large oven-safe pot over medium heat.
- Season lamb shanks with salt and pepper.
- Brown the lamb shanks on all sides, then remove from the pot.
- Add onion, carrots, and celery to the pot; sauté until softened.
- Add garlic and cook for 1 minute.
- Pour in red wine and scrape up the browned bits.
- Add beef broth, rosemary, and thyme.
- Return lamb shanks to the pot; bring to a simmer.
- Cover and transfer to the oven; braise for 2-3 hours until tender.
- Remove from oven and let rest before serving.
Notes
- Serve with mashed potatoes or crusty bread.
- Leftovers can be refrigerated for up to 3 days.
- Use a slow cooker for an easier method.
