Ingredients

  • 2 lamb shanks
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Heat olive oil in a large oven-safe pot over medium heat.
  3. Season lamb shanks with salt and pepper.
  4. Brown the lamb shanks on all sides, then remove from the pot.
  5. Add onion, carrots, and celery to the pot; sauté until softened.
  6. Add garlic and cook for 1 minute.
  7. Pour in red wine and scrape up the browned bits.
  8. Add beef broth, rosemary, and thyme.
  9. Return lamb shanks to the pot; bring to a simmer.
  10. Cover and transfer to the oven; braise for 2-3 hours until tender.
  11. Remove from oven and let rest before serving.

Notes

  • Serve with mashed potatoes or crusty bread.
  • Leftovers can be refrigerated for up to 3 days.
