Delicious cookies inspired by the classic Boston cream pie.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vanilla frosting
  • 1/2 cup chocolate ganache

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar.
  4. Add egg and vanilla to the butter mixture. Mix well.
  5. Gradually add dry ingredients to the wet ingredients. Mix until combined.
  6. Drop tablespoonfuls of dough onto a baking sheet.
  7. Bake for 10-12 minutes. Let cool.
  8. Once cooled, spread vanilla frosting on half of the cookies.
  9. Top with another cookie to make a sandwich.
  10. Drizzle chocolate ganache over the tops of the cookies.
