Delicious cookies inspired by the classic Boston cream pie.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vanilla frosting
- 1/2 cup chocolate ganache
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, baking powder, and salt.
- In another bowl, cream butter, granulated sugar, and brown sugar.
- Add egg and vanilla to the butter mixture. Mix well.
- Gradually add dry ingredients to the wet ingredients. Mix until combined.
- Drop tablespoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes. Let cool.
- Once cooled, spread vanilla frosting on half of the cookies.
- Top with another cookie to make a sandwich.
- Drizzle chocolate ganache over the tops of the cookies.
Notes
- Store cookies in an airtight container.
- Let ganache set before serving.
- Use any leftover frosting for other desserts.
