Borracho beans are a flavorful Mexican dish made with pinto beans cooked in a rich broth with spices and beer.

- 2 cups pinto beans
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 jalapeño, diced
- 1 can diced tomatoes
- 1 cup beer
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Soak the pinto beans overnight in water.
- Drain and rinse the beans.
- In a large pot, sauté onion and garlic until soft.
- Add jalapeño and cook for 2 more minutes.
- Stir in the beans, tomatoes, beer, broth, and cumin.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Add salt to taste.
- Garnish with fresh cilantro before serving.
Notes
- Adjust spice level by adding more or less jalapeño.
- Use any light beer for best results.
- Serve with tortillas or rice.
