Ingredients

  • 1 onion, chopped

  • 1 jalapeño, diced
  • 1 can diced tomatoes

  • 4 cups vegetable broth

  • Salt to taste

Instructions

  1. Soak the pinto beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, sauté onion and garlic until soft.
  4. Add jalapeño and cook for 2 more minutes.
  5. Stir in the beans, tomatoes, beer, broth, and cumin.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  7. Add salt to taste.
