Bomboloni are Italian donuts filled with custard or jam, soft and fluffy.
Ingredients

- 500g all-purpose flour
- 100g sugar
- 2 teaspoons active dry yeast
- 250ml milk, warm
- 2 large eggs
- 80g unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Oil for frying
- Powdered sugar for dusting
- Filling of your choice (custard or jam)
Instructions
- In a bowl, combine warm milk and yeast. Let it sit until frothy.
- In a large bowl, mix flour, sugar, and salt.
- Add yeast mixture, eggs, melted butter, and vanilla. Knead until smooth.
- Cover the dough and let it rise in a warm place for 1 hour.
- Roll out the dough to 1-inch thickness. Cut into circles.
- Let the circles rise for another 30 minutes.
- Heat oil in a deep pan. Fry the donuts until golden brown.
- Cool slightly and fill with custard or jam.
- Dust with powdered sugar before serving.
Notes
- Ensure the oil temperature is right for frying.
- Experiment with different fillings.
