A moist and flavorful coffee cake that combines blueberries and sour cream.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups fresh blueberries
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking dish.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs and vanilla to the butter mixture and mix well.
- Alternate adding the flour mixture and sour cream to the butter mixture, starting and ending with flour.
- Gently fold in blueberries.
- Pour the batter into the prepared dish.
- Mix brown sugar and cinnamon, then sprinkle over the batter.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Use fresh blueberries for best results.
- Store leftovers in an airtight container.
