Delicious vegan madeleines flavored with blueberry and lavender.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 cup fresh blueberries
- 1 tsp dried lavender
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, whisk almond milk, maple syrup, and melted coconut oil.
- Combine the wet and dry ingredients.
- Gently fold in blueberries and lavender.
- Grease a madeleine pan.
- Pour batter into the pan, filling each mold halfway.
- Bake for 10-12 minutes or until golden.
- Let cool before removing from the pan.
Notes
- Store in an airtight container for up to 3 days.
- Use fresh lavender for better flavor.
- Substitute coconut oil with any vegetable oil if preferred.
