A delicious and visually appealing quesadilla ring filled with cheese and vegetables.
Ingredients

- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1 cup corn
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat.
- Add bell peppers, mushrooms, corn, cumin, garlic powder, salt, and pepper. Cook for 5 minutes.
- On a baking sheet, place one tortilla and spread half of the cheese on top.
- Add the cooked vegetable mixture over the cheese.
- Cover with another tortilla and repeat layering until all ingredients are used.
- Top with the remaining cheese.
- Bake for 15-20 minutes until cheese is melted and tortillas are golden.
- Slice into wedges and serve hot.
Notes
- Feel free to customize with your favorite vegetables.
- Serve with salsa or guacamole for dipping.
- Store leftovers in an airtight container in the fridge.
