Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup corn
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add bell peppers, mushrooms, corn, cumin, garlic powder, salt, and pepper. Cook for 5 minutes.
  4. On a baking sheet, place one tortilla and spread half of the cheese on top.
  5. Add the cooked vegetable mixture over the cheese.
  6. Cover with another tortilla and repeat layering until all ingredients are used.
  7. Top with the remaining cheese.
  8. Bake for 15-20 minutes until cheese is melted and tortillas are golden.
  9. Slice into wedges and serve hot.
