A refreshing and zesty lemon pie made using a blender for easy preparation.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 1 cup fresh lemon juice
- 1 can (14 ounces) sweetened condensed milk
- 4 large eggs
- 1 tablespoon lemon zest
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well.
- Press the mixture into the bottom of a pie pan to form a crust.
- Bake the crust for 8-10 minutes until golden. Remove from oven and let cool.
- In a blender, combine lemon juice, sweetened condensed milk, eggs, and lemon zest. Blend until smooth.
- Pour the lemon filling into the cooled crust.
- Bake for 15-20 minutes until set. Remove from oven and cool.
- Chill in the refrigerator for at least 2 hours before serving.
- Dust with powdered sugar before serving.
Notes
- Use fresh lemons for the best flavor.
- Store leftovers in the refrigerator.
- For a creamier texture, add whipped cream on top.
