A simple and nutritious black eyed peas recipe.
Ingredients

- 1 cup black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 1 carrot, diced
- 1 celery stalk, diced
- 1 bay leaf
Instructions
- Rinse the black eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until soft.
- Add the black eyed peas, water, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove the bay leaf before serving.
Notes
- Soak peas overnight for faster cooking.
- Can add ham or bacon for flavor.
