Description
A simple and hearty black-eyed peas recipe made in a crock pot.
Ingredients

- 1 pound black-eyed peas, soaked
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon black pepper
- Salt to taste
- 2 tablespoons olive oil
Instructions
- Rinse and drain the soaked black-eyed peas.
- In a skillet, heat olive oil and sauté onion, garlic, and bell pepper until soft.
- Add sautéed vegetables to the crock pot.
- Add black-eyed peas, vegetable broth, cumin, black pepper, and salt.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Serve warm.
Notes
- Adjust seasoning according to your taste.
- Can add diced tomatoes for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
