Ingredients

  • 1 cup black eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 teaspoon cumin

Instructions

  1. Rinse the black eyed peas under cold water.
  2. Soak the peas in water for 8 hours or overnight.
  3. Drain and rinse the peas again.
  4. In a pot, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add the soaked black eyed peas, water, bay leaf, salt, pepper, and cumin.
  7. Bring to a boil, then reduce heat and cover.
  8. Simmer for 45 minutes or until peas are tender.
  9. Remove bay leaf before serving.

Notes

  • For a thicker consistency, mash some of the peas.
  • Serve with rice or cornbread.
