A nutritious and hearty dish made with black eyed peas.
Ingredients

- 1 cup black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 bay leaf
- 1 teaspoon cumin
Instructions
- Rinse the black eyed peas under cold water.
- Soak the peas in water for 8 hours or overnight.
- Drain and rinse the peas again.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add the soaked black eyed peas, water, bay leaf, salt, pepper, and cumin.
- Bring to a boil, then reduce heat and cover.
- Simmer for 45 minutes or until peas are tender.
- Remove bay leaf before serving.
Notes
- For a thicker consistency, mash some of the peas.
- Serve with rice or cornbread.
- Add vegetables for extra flavor.
