- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, chopped
- 3 tablespoons soy sauce

- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the beaten eggs and scramble until fully cooked. Remove and set aside.
- Add mixed vegetables and cook for 2-3 minutes.
- Add the cooked rice to the skillet and stir well.
- Pour in soy sauce and sesame oil, mixing thoroughly.
- Add scrambled eggs and green onions, stirring to combine.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, stirring occasionally.
- Serve hot.

- Use day-old rice for best results.
- Feel free to add protein like chicken or shrimp.
