- 1/2 cup red cabbage, shredded
- 1/2 cup vegan mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon celery seeds
- Salt and pepper to taste
Instructions
- In a large bowl, combine green cabbage, carrots, and red cabbage.
- In a separate bowl, whisk together vegan mayonnaise, apple cider vinegar, maple syrup, and celery seeds.
- Pour the dressing over the cabbage mixture.
- Toss until all vegetables are well coated.
- Add salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving.
Notes
- Adjust sweetness by adding more or less maple syrup.
- For extra crunch, include sliced almonds or sunflower seeds.
