Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, sauté until softened.
  5. Stir in carrots and potatoes.
  6. Add beef back to the pot.
  7. Pour in beef broth and add tomato paste, thyme, bay leaf, salt, and pepper.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 2-3 hours until beef is tender.
  10. Remove bay leaf before serving.

Notes

  • For thicker stew, mix 2 tablespoons of flour with water and stir in during the last 30 minutes.
