A hearty stovetop beef stew that delivers rich flavors and tender meat.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic to the pot, sauté until softened.
- Stir in carrots and potatoes.
- Add beef back to the pot.
- Pour in beef broth and add tomato paste, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2-3 hours until beef is tender.
- Remove bay leaf before serving.
Notes
- For thicker stew, mix 2 tablespoons of flour with water and stir in during the last 30 minutes.
- Adjust seasoning to your taste.
