  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla.
  4. Gradually add dry ingredients to the wet mixture.
  5. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  6. Fill muffin tins halfway with batter, add a dollop of cream cheese, then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
