Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté onion and bell pepper until soft.
  4. Add chopped spinach and cook until wilted.
  5. In a bowl, whisk together eggs, milk, salt, and pepper.
  6. Pour the egg mixture over the vegetables in the skillet.
  7. Sprinkle cheese on top.
  8. Cook for a few minutes until the edges set.
  9. Transfer the skillet to the oven and bake for 15-20 minutes.
  10. Remove from oven and let cool slightly before slicing.
