A refreshing quinoa salad with feta cheese that is packed with flavor.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it cool.
- In a large bowl, combine chopped vegetables and feta cheese.
- Add cooled quinoa to the bowl.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper. Mix well.
- Serve chilled or at room temperature.
