- 1 pound fresh okra
- 2 cups distilled white vinegar
- 1 cup water
- 1 tablespoon salt
- 2 cloves garlic, peeled
- 1 tablespoon sugar
- 1 teaspoon red pepper flakes
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
Instructions
- Wash the okra and trim the stems.
- In a pot, combine vinegar, water, salt, and sugar. Bring to a boil.
- Add garlic, red pepper flakes, mustard seeds, and black peppercorns to the pot.
- Pack okra into sterilized jars.
- Pour the hot brine over the okra, leaving a little space at the top.
- Seal the jars and let them cool to room temperature.
- Refrigerate for at least 24 hours before serving.
