Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 1/2 cup sour cream
- Salt to taste
- Pepper to taste
- Chives for garnish
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add diced potatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Blend the soup until smooth, using an immersion blender or a regular blender.
- Stir in milk and sour cream.
- Season with salt and pepper.
- Garnish with chives before serving.
Notes
- Use any type of potato you prefer.
- Adjust thickness by adding more or less milk.
- Can be stored in the refrigerator for up to 3 days.
