Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1/2 cup sour cream
  • Salt to taste
  • Pepper to taste
  • Chives for garnish

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add diced potatoes and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Blend the soup until smooth, using an immersion blender or a regular blender.
  5. Stir in milk and sour cream.
  6. Season with salt and pepper.
  7. Garnish with chives before serving.
