  • Eggs: 3 large

  • Sour cream: 240 grams (1 cup)
  • Graham cracker crust: 1 pre-made (about 9 inches)
  • Mixed berries: 300 grams (2 cups), fresh

Instructions

  1. Prepare the crust by pressing a pre-made graham cracker crust into the bottom of a 9-inch springform pan.
  2. In a large mixing bowl, beat the softened cream cheese until smooth, then gradually add the granulated sugar.
  3. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and mix until combined.
  4. Gently fold in the sour cream, being careful not to overmix.
  5. Fold in a handful of mixed berries into the cheesecake mixture for added flavor.
  6. Pour the creamy filling into the prepared graham cracker crust and smooth the top.
  7. Bake in a preheated oven at 160°C (325°F) for 50-60 minutes until the edges are set and the center is slightly jiggly.
