- 1.5 lbs beef tenderloin
- 1 lb mushrooms, finely chopped
- 4 oz pâté
- 1 package puff pastry
- 1 egg, beaten
- 2 tbsp Dijon mustard
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef with salt and pepper.
- Sear the beef in a hot pan until browned on all sides.
- Remove beef and let it cool.
- Sauté the mushrooms until moisture evaporates.
- Spread mustard over the beef, then layer the mushrooms and pâté on top.
- Roll out puff pastry and wrap it around the beef.
- Seal the edges and brush with beaten egg.
- Bake for 25-30 minutes until golden brown.
- Let it rest for 10 minutes before slicing.
