Ingredients

- Beef tenderloin roast – 3 to 4 pounds
- Olive oil – 2 tablespoons
- Salt – 1 tablespoon
- Black pepper – 1 teaspoon
- Garlic – 4 cloves, minced
- Fresh rosemary – 2 sprigs, chopped
- Fresh thyme – 2 sprigs, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- Rub the beef tenderloin with olive oil, salt, and pepper.
- In a small bowl, mix garlic, rosemary, and thyme. Rub this mixture onto the beef.
- Place the roast on a roasting pan.
- Roast in the preheated oven for 25-30 minutes for medium-rare.
- Use a meat thermometer to check for an internal temperature of 130°F (54°C).
- Remove the roast from the oven and let it rest for 15 minutes before slicing.
